Berry vodka



Ingredients:

350g raspberries
350g strawberries, hulled and quartered
zest of 1 lemon
200g caster sugar
1 vanilla pod, halved
70cl vodka

Preparation:

Place the strawberries, raspberries, lemon zest and sugar in a large bowl and lightly crush with the back of a wooden spoon or fork.
Add the vanilla pod, mix well and leave to one side for about 2 hours, until the sugar has dissolved and the fruits start to become very juicy.
Spoon the contents of the bowel into a large sterilized jar and pour the vodka.
Mix well and chill for 1 week or until needed, up to a month.
Strain the vodka through a fine muslin or sieve, and decant into a pretty sterilized bottle.

Tips:

Can be kept in the fridge for up 2 months.
Serve in cocktail glasses with ice or ice cold shot glasses.
You can also add a dash of Champagne.
