Marinated goat's cheese



Ingredients:
  • 4 fresh goat's cheeses
  • 1 bay leaf
  • 1/2 tbsp fresh oregano leaves
  • 1 red bird's-eye chilli
  • 1 unwaxed lemon
  • 1/2 tsp fennel seeds
  • 2 cloves of garlic, peeled and halved
  • extra virgin oil, to cover

Preparation:

Pack the cheeses into a sterilized jar,
Add the bay leaf and oregano leaves.
Cut the chilli in half through the stalk and pare 2 strips of zest from the lemon.
Arrange the chilli and lemon zest around the cheeses.
Add the fennel seeds and garlic cloves.
Pour extra virgin oil so that the cheeses are completely covered.
Seal the jar and chill.
Bring back to room temperature to serve.

Tips:

Store in the fridge up to 1 week until needed and then drain and eat with bread, crumbled into salads or grilled on slices of baguette with a good spoonful of tomato chutney.
