Storing your herbs


Refrigerate
In hot weather or in winter when your kitchen may be warm, keep herbs in the fridge in an open plastic bag. This protects them while while still allowing ethylene gas. releases by cut stalks, hastening decay, to escape.

Dry
Gather plants before flowering. then lay them on a rack and put in an airing cupboard or low oven with the door slightly open, until they are brittle but still green.

Freeze
For fragile types such as basil and parsley, wrap in foil, or pack into ice-cube trays and top with water, then place in the freezer.
