Fruity pilaf

Ingredients:

125g long-grain rice
50g each of raisins and chopped dried apricots
120ml apple juice
1 tsp oil
1/4 tsp saffron
1 cinnamon stick
1 tsp runny honey
1 diced nectarine
a few toasted skinned almonds and a little chopped
fresh mint
fresh coriander to serve

Preparation:

Place the rice in a large saucepan with an equal volume of cold water and add the oil, a little salt and saffron.
Bring to boil, stir once, cover and simmer for 20 minutes when the liquid should be absorbed.
Simmer the raisins, apricots, cinnamon and honey in the apple juice until soft, then reduce the syrup to about 1 tbsp.
Stir the fruit, the syrup and nectarine into the rice.
Add the nuts and mint, and serve with Lamb kebabs.
