Mustards



Mustards are made from black, brown or white mustard seeds which are ground, mixed with spices and then, usually, mixed with vinegar.
There are many flavoured mustards available, including horseradish, honey, chilli and tarragon.
Meaux mustard is made from mixed mustard seeds and has a grainy texture with a warm spicy taste.
Dijon mustard, made from husked and ground mustard seeds, is a medium hot mustard with a sharp flavour and is the most versatile in salads. It is made in Dijon, France, and only mustard made there can be labelled as such.
German mustard is a mild sweet/sour tasting mustard and is best used in Scandinavian and German salads.
