How to freeze fruits

Berries or rhubbarb cut in chunks, are best open-frozen first, spread out on trays. Then transfer to freezer bags or sealable plastic containers. Berries can also be frozen in ice cubes to jazz up water.

Stone fruits, such as apricots, peaches, plums, damsons and greengages, can either br frozen whole in freezer bags, or halved, stones removed, open-frozen like berries, and then packed.

Citrus fruits for marmalade can be washed and frozen whole or sliced, or peeled with rind and flesh frozen separatedely, as your recipe requires.

The grated or thinly pared zest of lemons, limes and oranges, can be frozen separatedely, in small plastic boxes. Freeze juice in ice cube trays, then store in freezer bags for making citron pressé later.

Fruit such as apples or pears can be peeled, cored and stewed with or without sweetening and frozen in portions for use as sauce or in pies or desserts. They can also be poached in apple juice.
