Tiramisu alla frutta


Serves 6

Ingredients:

400g mascarpone cheese
2 tbsp caster sugar
200g ready-to-go custard chilled
6 tbsp white rum
500g strawberries
3 tbsp whipped cream
10 amaretti biscuits, roughly crumbled
200ml apple juice
25 sponge fingers

Preparation:

Place the mascarpone cheese in a bowl and soften with a fork. Add the caster sugar, custard and 1 tbsp rum and mix together well.
Cut 1/4 of the strawberries into very small pieces and fold gently into the mascarpone mixture with the whipped cream and 1/3 of the amaretti biscuits.
Mix the remaining rum with the apple juice and slice the rest of the strawberries, leaving a few whole to decorate.
Dip some of the sponge fingers into the apple juice and rum, then use to cover the bottom of a glass serving dish. Arrange a layer of sliced strawberries on top, then cover with a large of the mascarpone cream mixture. Repeat with another layer os soaked biscuits, more strawberries and mascarpone cream. Continue until the dish is filled, with a final layer of mascarpone cream.
Decorate with the remaining crumbled biscuits and the reserved strawberries.
Chill out for at least 5 hours, preferably overnight, before serving.
