Fried egg noodles with prawns and broccoli in oyster sauce

Serves 4

Ingredients:

225g dry egg noodles
2-3 tbsp sunflower or olive oil
110g broccoli, cut into bite size pieces
2 tbsp soy sauce
2 tbsp oyster sauce
2 tbsp seasoned rice vinegar dressing
little black pepper

Preparation:

Cook the noodles as directed until only just cooked. Drain well and rinse in cold water. Dry slightly.
Preheat a wok or large frying pan. Add 1 tbsp oil and swirl it around. Add the noodles and toss until hot and sizzling. Transfer to a plate with a draining spoon.
Heat the rest of the oil and add the prawns and broccoli and stir fry for 2 minutes. Add in all the sauces and continue cooking for 1-2 minutes.
Finally add the rice vinegar dressing and stir fry for a further minute tossing thoroughly.
Check the seasoning and serve immediately.
