Baked sweet potatoes

Serves 6

Ingredients:

6 medium scrubbed sweet potatoes 
1 tbsp vegetable oil
125g chopped rindless smoked bacon
1 medium finely chopped onion
2 tbsp chopped fresh chives
25g butter
salt and freshly ground pepper

Preparation:

Preheat the oven to 200ÂșC / gas Mark 6.
Prick the potatoes several times with a fork and cook at the top of the oven for about 1 hour until tender. Leave until cool enough to handle.
Meanwhile, heat the oil in a frying pan and cook the bacon and onion until the onion is softened.
Cut the top off each potato and scoop out the flesh leaving a thin wall of potato in each one. 
Mash well then add the bacon mixture, chives and butter. Mix well and season to taste.
Pile the mixture back into the potato skins and return to the oven for 15 minutes to heat through. Serve as a snack with salad or as a vegetable accompaniment to jerk chicken.
