Serves 4
Ingredients:
4 tbsp tamari soy sauce
2 garlic cloves, crushed
2 tbsp finely grated fresh ginger rrot
freshly squeezed juice of 2 oranges
4 salmon fillets, skinned
12 spring onions, trimmed
sunflower oil, for greasing
Preparation:
Place the soy sauce, garlic, ginger and orange juice in a bowl and mix well. Add the salmon and turn to coat in the marinade. Cover and leave to marinate in the fridge for 30-60 minutes.
Lightly oil and preheat an electric health grill or ridged griddle pan. Lift the salmon out of the marinade and shake off any excess. Place on the grill or griddle. Add the spring onions. Cook for 4-5 minutes, until cooked to taste. If using a health grill, close the lid. If using a griddle, turn the fish over halfway through the cooking time.
Remove the salmon and onions from the grill or griddle and stand for 3 minutes before serving.
Serve the salmon topped with spring onions and accompanied by freshly steamed or stir-fried vegetables and cooked noodles.
Notes:
