Hot rice pudding with berry fruits

Serves 4

Ingredients:

50g pudding rice
600ml skimmed milk
1 tbsp caster sugar or 1 tbsp runny honey
2 strips of lemon rind
grated nutmeg (optional)
low-fat spread to grease dish
fresh or tinned berry fruits, to serve

Preparation:

Preheat the oven to 150ÂșC/ Gas mark 2.
Wash the rice and drain well. Grease a 750ml ovenproof dish with a little low-fat spread, add the rice and stir in the milk.Leave the rice to soak in the milk for 30 minutes.
Add the lemon rind and sprinkle over the sugar or honey. Grate nutmeg over, if liked.
Place in the oven and bake for 2 or 2 and half hours. Stir the pudding after the first 45 minutes.
Spoon the rice pudding into 4 bowls. Serve the rice pudding topped with tinned or fresh berry fruits.

Health Facts:
Skimmed milk contains virtually the same amount of calcium as semi-skimmed or full-fat milk, but much less fat.
