Cool tomato soup


Ingredients:

1 kg fresh tomatoes, quartered and stalks removed
2 spring onions, finely chopped
4 tbsp fresh basil, finely chopped
Sea salt and freshly  ground pepper to taste

Preparation:

Blend the tomatoes. Heat gently in a saucepan.
Add the spring onion and basil. Season. Leave to coll and then chill well before serving.
