Sour cucumber with fresh dill

Serves 4

Ingredients:

2 small cucumbers, thinly sliced
3 onions, thinly sliced
75 - 90 ml cider vinegar
30 - 45 ml chopped fresh dill
salt and ground pepper

Preparation:

In a large mixing bowl, combine together the thinly sliced cucumbers and the thinly sliced onion.
Season the vegetables with salt and toss together until they are thoroughly combined. Leave the mixture to stand in a cool place for 5 - 10 minutes.
Add the cider vinegar, 2 or 3 tbsp water and the chopped fresh dill to the cucumber and onion mixture. Toss all the ingredients together until well combined, then chill in the refrigerator for a few hours, or until ready to serve.
