Serves 4-6
Ingredients:
1kg cassava, boiled and drained
1/3 cup olive oil or vegetable oil
1 tbs chopped garlic
2 tbs fresh lime juice
2 tbs chopped cilantro (chandon beni)
salt
ground pepper
Preparation:
Remove the inner vein from the cassava. Cut the cassava into 5 cm lengths and place in a shallow baking dish.
Heat the oil in a small saucepan, add the garlic, salt and freshly ground black pepper. Sauté for a few minutes, without browning the garlic.
Add the cilantro, stir and pour the mixture over the cassava.
Preheat broiler or grill.
Place the cassava under broiler and broil until it is hot and the edges are browned.
