Serves 4
Ingredients:
1 and 1/2 cups sugar
1/3 cup cornstarch
pinch of salt
4 eggs, separated
1 tbsp vanilla extract
1/3 cup fresh lime juice
1/4 cup evaporated milk
Garnish:
1 tbs lime zest, chopped
dash of aromatic bitters
Preparation:
Heat 1 and 2/3 cups water in a saucepan. Whisk in the sugar, cornstarch and salt and stir until the mixture thickens.
Beat the egg yolks in a bowl with the vanilla, Add a spoonful of the hot liquid to the eggs, then add the egg mixture to the hot liquid in the pan and stir constantly over a low heat for 2 minutes. Add the lime juice and milk. Leave the mixture to cool.
Beat the egg whites to stiff peaks and fold into the lime custard.
Spoon into stemmed glasses, garnish with chopped lime zest and top with a dash of aromatic bitters.
