Greek salad

Serves 4

Ingredients:

1/2 cucumber
1 small onion, sliced thinly into rings
1 green bell pepper, without seeds and chopped
500g tomatoes
4 tbsp olive oil
1tbsp vinegar
1 tbsp chopped fresh basil
1 tbsp chopped fresh oregano
250g Feta cheese
salt and pepper
60g black olives

Preparation:

Cut the cucumber into a large dice and put into a bowl with the sliced onion and chopped green bell pepper.
Cut each tomato into 8 wedges and add to the bowl with the oil, vinegar. herbs, salt and pepper to taste.
Toss all the ingredients thoroughly and turn into a salad bowl.
Cut the Feta cheese into cubes.
Sprinkle the cheese evenly over the salad.

Tips:
If possible, use Greek Kalamata olives. They are purple-brown colour and have a superior falvour to other varieties.
